MUNG BEAN
Mung beans are native from India, a country where they are still cultivated today as well as in China and Pakistan. This legume is green on the outside and on the inside it has a light yellow color, its shape is rounded.
In developing countries this legume stands out because of its importance for the nutrition of the population. It has a high content of fiber, protein, iron, carbohydrates and vitamins that make it a healthy food.
In Asian food, it is common for mung beans to be sprouted, their sprouts are then used in stir-fries or salads, while in Indian food, the skinless seeds are used in stews. These beans can also be used to make flour that is known to be gluten free.
